This is a surprisingly well balanced coffee. Despite being a coferment, the flavor is nuanced and complex. Fruity and floral with a distinct aftertaste reminiscent of toasted coconut, this coffee excels on any pour-over method.
A coferment is a coffee that was fermented alongside other ingredients, before the raw coffee processing is complete. This is done at origin, well before roasting, and is different from artificially flavored coffees you would typically find at a gas station or bagel shop. All coffee is fermented at some stage, and the mango in this recipe augments the natural fermentation.
This coffee is produced by Jairo Arcila of Santa Monica farm in Quindio, Colombia. Jairo produces a wide variety of innovative coffees. We roast this quite light, on our Stronghold S7 Pro, a Korean-made all electric roaster, the same model used at the World Roasting Championships.
